It’s Fair Food Friday again. This week: onion rings! Seriously, who can resist those golden rings of temptation with their delicious oniony taste and crispy coating….mmmmm. Onion rings.
I feel like onion rings are a bit like french fries: people have a particular feeling about them. Some like them starched to the point where there’s no give and some like them wiggly like worms. Others like them in between. Me, I like to be able to bite into it with that awesome CRUNCH sound but not fall apart on me. It needs to have a wee bit of kick, but not too much kick (that’s for the condiments, should I choose to use them). These are the perfect ringer (ar ar ar) for the kind of onion rings I prefer.
Good thing, too. A not so little known fact about JT is that he’s extremely particular about getting things right in the kitchen. Not a bad thing, but it can get a little painful when the tummy is growling and he insists that the chicken isn’t cut symmetrically enough for him or the blueberries aren’t blue enough. Okay, so he’s nowhere near that bad. But with these rings he kept going back and forth on whether he needed to add a little more of this or that. Never mind how many times I told him they were delicious. He’s that kind of cook. Makes for awesome dishes when they’re finished but one very hungry Dani as he teases me with tasting every other bite to see if it’s “right” yet but without giving me the whole darn meal that I want to eat already!
You see now that these onion rings were made to perfection, I hope. If you need a display of his kitchen insanity I may have to record “An Evening in the Life of Wife Seeing Hubby Cook – A torturous documentary to those who get hungry easily.”
Then again, I may run out of battery on my camera before his cooking show is over.
A head’s up for next Friday, it will not be fried food! I know, I know, that’s what fairs seem to be all about. But there’s only so much fried food I can handle in a month. Sad truth, isn’t it? At least this gives fair food some variety though!
- 1 cup flour
- ½ cup cornmeal
- 4 eggs
- 2 tbsp oil
- 2 tsp salt
- 1 tsp pepper
- ½ tsp cayenne
- ½ tsp garlic powder
- 2 white onions
- Mix flour, cornmeal, salt pepper, cayenne, and garlic powder in a large bowl.
- Add eggs and oil to the mixture and combine until smooth.
- Slice onions into rings.
- Place ringed onions into the batter.
- Cook batches of onions in a shallow pan with oil until golden brown (time depends on how hot your oil is and how “golden” you want them. For us it took only a minute or two at most per batch).
